Kheema Curry

We previously made some Sloppy Joes following a recipe from Food Network, and while it was likeable, we decided to change things up.  Personally, I like this version more.  It is not as saucy and has more flavor.

16 oz ground beef

1 teaspoon cumin
3 cloves
2 small cinnamon sticks

3 tablespoons ghee
6 oz onion, diced

1 teaspoon garam masala
1 teaspoon paprika
1 teaspoon salt
1/2 teaspoon turmeric
1 teaspoon coriander powder
1 teaspoon fennel powder
1 oz ginger
6 cloves garlic
1 serrano chili

3 prunes

8 oz tomato puree
1/4 cup tomato ketchup
1/4 cup barbecue sauce

1 potato, cubed
1/4 cup frozen peas

Grate the ginger and garlic on the fine side of the grater.  In a small bowl, place the ginger and garlic and measure out the garam masala, paprika, salt, turmeric, coriander powder, and fennel powder.  Chop the serrano chili and add to the bowl.  Set aside.

In a small pan, heat the cumin, cinnamon, and cloves, over medium heat.

In a karahi, fry half of the onions in ghee over medium heat, stirring occasionally until golden brown.  Remove with a slotted spoon, and set aside in a colander to drain.

In the same ghee, fry the spices mixture over high heat.  Add ground beef, prunes, and remaining onion, and cook until dry.

Add the reserved golden fried onions, tomato puree, sauces, and potatoes.  Mix well, reduce heat to low, and cover with lid, stirring occasionally until potatoes are done.  Add frozen peas and stir in, and leave on low heat for about another 5 minutes.

Garnish with cilantro and serve hot in buns with cheese as sloppy joes or simply as curry with sliced bread or roti on the side.
